Prepare shrimp, green onions, shallots, ginger, garlic, baking soda, starch, salt, sugar, light soy sauce, white pepper, cooking wine, and cooking oil.

1. Vegetables are prepared at will, as long as the shrimp is processed well, it will be delicious with any dish. Wash the prepared vegetables, cut them and set aside. Wash and chop the green onions, ginger and garlic, and chop the shallots into chopped green onions. Put salt, sugar, cooking wine, white pepper, light soy sauce, water, sesame oil in a small bowl and stir well to prepare the sauce.

2. Take out the shrimp line with the shrimp open back, don’t be lazy. Rinse and drain after tidying up. Then put the shrimp into a bowl, add a little salt, sugar, baking soda and water, and scratch it repeatedly until the shrimp are glued out and huddled.

3. After processing, add a little starch and continue to scratch until each shrimp is sticky and white.

4. After processing, add water to wash and change the water several times until the shrimp becomes a crystal state. Then remove the water, add a spoonful of starch and mix until the shrimp are in a lump.

5. Add water to the pot, boil until a large number of small bubbles appear at the bottom of the pot, when it is about to boil, put the shrimp into the pot, wait for the water to boil, quickly remove the shrimp, and drain the water.

6. Add oil to the pot, add green onions, ginger and garlic after heating, stir-fry until fragrant, and then add vegetables and stir-fry. (If some vegetables are not easy to cook, you can blanch them first and then fry them in oil)

7. After frying until it is broken, add the sauce and stir-fry, then pour in the shrimp, stir-fry quickly over high heat, fry until there is a little juice left, you can get out of the pot, sprinkle with chopped green onions.

To stir-fry shrimp, remember not to put it directly into the pot, and do the following steps:
