Since February this year, the Beijing News has found that some Wallace stores have frequently modified the “expiration date” (expiration date) and used expired ingredients to make meals.
At Wallace’s Zhengzhou Baifu Street store, a Beijing News reporter found that a bag of lettuce in use had expired and began to turn yellow and black. The clerk said: “I gave it a ‘graft’, and there is still a lot of (expired lettuce) left.” ”
The reporter learned by asking the clerk that the so-called “grafting” is that the clerk leaves the lettuce packaging bags that have been used up within the shelf life, and then puts the expired lettuce into these packaging bags.
In addition to using expired lettuce, the Pak Fuk Street store also frequently uses expired chicken thighs and other meat products that should have been discarded.
The meat that has reached the “disposal time” is asked by the store manager: “Print a new label and replace it.” In this way, bags of meat that have expired are changed from “scrap” to “fresh ingredients” and finally sold to customers.

In the Baifu Street store, the reporter found that the store only has an oil tank for frying meals, and all the meals that need to be fried come from it. Due to the frequent use, the new oil is often dark brown by the third day of use, and there is smoke when the ingredients are fried.
The reporter took samples of the frying oil that was still in use and sent it for testing. The test results showed that the acid value of the sample was 8.1106mg/g, which exceeded the national mandatory standard by 60%. The polar component was 13%. This means that the restaurant is still frying ingredients and selling them even when the frying oil exceeds the standard.

In addition to the undercover two Wallace stores in Zhengzhou, Henan Province and Hefei, Anhui Province, the Beijing News reporter also found that the store was involved in health certificate fraud when he made an unannounced visit to the Wallace Zhengzhou Jingbei Sixth Road store. When the store manager interviewed a reporter from the Beijing News, he claimed that he had been “applying for a fake health certificate” through an intermediary for a long time.
