First, prepare the ingredients:

500 grams of fresh pork belly, 200 grams of vermicelli, ginger slices, green onions, minced garlic, star anise, cinnamon, bay leaves, rock sugar, cooking wine, light soy sauce, dark soy sauce, salt and chicken essence.

Then follow these steps:

1. Wash the pork belly, dry it and cut it into pieces for later use.

2. Soak the vermicelli in warm water in advance to soften, remove and drain the water for later use.

3. Pour an appropriate amount of oil into the pot, add rock sugar and fry the sugar color, until it is brown, then put in the pork belly and stir-fry, and put it out after the oil is fully released. Then leave the bottom oil in the pot, add ginger slices, green onions, and minced garlic and stir-fry until fragrant.

4. Add the sugar-colored pork belly cubes and continue to stir-fry until the surface turns dark.

5. Add a spoonful of cooking wine, a spoonful of light soy sauce, half a spoon of dark soy sauce, a little rock sugar, salt, star anise, cinnamon, bay leaves, and continue to stir-fry evenly.

6. Add an appropriate amount of water, bring to a boil over high heat, then turn to low heat and simmer slowly for 30 minutes.

7. Add the vermicelli and continue to simmer for about 10-15 minutes, until the aroma is overflowing, the soup is rich, and the vermicelli is flavorful.
